Ingredients:
1 cup quinoa
2 cups water or vegetable broth
2 cups fresh spinach, chopped
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup feta cheese, crumbled (optional)
1/4 cup sliced black olives (optional)
1/4 cup sunflower seeds or almonds (optional)
For the Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove, minced

Instructions:
Cook Quinoa:
Rinse the quinoa under cold water.
In a medium saucepan, bring 2 cups of water or vegetable broth to a boil.
Add the quinoa, reduce the heat to low, and cover.
Simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed.
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

While the quinoa is cooking, wash and chop the spinach.
Slice the cherry tomatoes and red onion.
