Gluten-free Louise slice- this old time New Zealand favourite can be enjoyed by everyone, even people with dietary sensitivities. It is perfect to serve as a mouth-watering dessert or have it as an afternoon treat.
Ingredients
150g butter, softened (or dairy-free margarine for lactose intolerant people) 1/3 cup caster sugar 1 tsp vanilla essence 1 egg 3/4 cup rice flour 3/4 cup tapioca flour 1/2 cup ground almonds 1 tsp gluten-free baking powder 3/4 cup jam (raspberry is traditionally used)
Topping: 2 egg whites 1/2 cup caster sugar 1/2cup desiccated coconut
1. Heat oven to 170°C. Grease or line with baking paper, a 17 x 27cm (or thereabouts) slice tin. Place butter, sugar and vanilla in a bowl and beat with an electric mixer until creamy.
2. Beat in egg, then stir in flours, ground almonds and baking powder and mix well. Spread mixture evenly into the base of prepared tin. Spread jam over base mixture.
3. In another bowl prepare beat egg whites until the peaks hold their shape. Beat in sugar just enough to combine, then stir in desiccated coconut. Spread topping over the jam.
4. Bake for 35 minutes. Leave to cool in the tin. When cooled, remove from the tin and slice into squares.
